Writing about Egypt and food is easy and difficult at the same time. Once you are here, you will find that Egyptians love food. They love to serve, share and enjoy.
You will also find the simplest food that is served in "big". The tables are always full of fresh, flavored and vegetable-topped ingredients. If it's just a simple fool tameja dish or meat / lamb meal for a special occasion.
If we were to brighten up all the delicacies of Egyptian cuisine, we would need more articles….
Let us mention a few that you should definitely try if you go outside your “all-inclusive box” and are ready to try something really local
Our advice:
Koshary
We just have to start with this special “mix” food. A layer of rice, macaroni, lentils and chickpeas with caramelized onions, thick red sauce and garlic / chilli / vinegar / sauce. It may looks strange, but it tastes fantastic! If you find a real “koshary” restaurant serving it, don't hesitate and give it a try!
Mahshi
If you are on a low-fat diet, get away from it. But you will definitely be sorry that you haven't tried it!
Mahshi is basically a vegetable of choice filled with a rice filling - such as zucchini, eggplant, bell pepper, tomato, cabbage leaves or vine leaves. The filling consists of rice, herbs (parsley, coriander and dill), tomato sauce with spices and a hint of cinnamon. Once you start eating this, you won't be able to stop.
The dish is prepared in fat "Samna" butter and that's the taste!
Molokheja
To remember this meal, you will call it "Egyptian Spinach". It is a leafy green stew, cut into small pieces and prepared in chicken, beef or seafood soup mixed with ground cilantro and fried garlic (we also mix in chopped tomatoes).
You can only eat it with Egyptian bread alone or you can have it served with boiled rabbit and vermicelli rice.
Fattah
Fattah goes back to ancient Egypt, where it was served in large celebrations. Fattah is still a main course on the first day of the Islamic festival (Eid al-Adha). It is a combination of crispy bread, meat and rice in tomato sauce.
Lamb is branded on the festive days. Otherwise you will love the beef.
Shawerma
Shawerma (chicken or beef) can be served as a dish, but most likely you will taste it as a sandwich first.
It originally came from the famous Greek gyros, but the Egyptians have taken their turn.
The meat is scraped off and placed in packaging. It is typically served with vegetables, tahini and the chicken with tomaya (garlic sauce).
Macaroni bechamel
There is no Egyptian family where this dish would not be served regularly!
Made from Rigatoni pasta, minced meat, cooked in chopped onions and tomato paste, topped with the classic Bechamel sauce. Simple but tasty!
Pigeon stuffed with rice
This is more restaurant than home cooking. Pigeon filled with flavored rice, vegetables and lots of sauces. Are you ready to try? Sometimes you can find it in your hotel restaurant for dinner.
Desserts and sweets
When Egyptians eat something sweet, it is really "sweet". You can try the famous Kunafa or Basbousa dessert. Do you just like "Roz Bel Laban" for breakfast - Egyptian version of rice pudding?
You can satisfy your sweet hunger with the bowl "Om Ali". Legend has it that Sultan Ezz El Din Aybak's wife turned this dish into a victory celebration where it was made and shared among the people of the country. Since then it has become famous after her.
Dessert combined with sweet flavors of bread (puff pastry), milk and sugar - the Egyptian version of bread pudding. It is usually topped with a mixture of raisins, nuts and pieces of coconut, served hot.
Is there any way to warm up on the windy Egyptian night, sit in the café and ask for "Sahlab". Its base is hot milk, mixed with pure orchid root powder, which gives it a tasty and thick taste. Sahlab can be conveniently made with instant sachets that contain this powder and other ingredients such as vanilla, sugar and cinnamon.
Are you ready? Let the food adventure begin!
